The Bull & Bear at the Old Stock Exchange, Manchester

Project Overview

As part of the grand renovation of The Bull & Bar in Manchester—led by renowned chef Tom Kerridge—Sorrells was appointed to design and build a bespoke wine cellar for the private dining room. The space brings together exceptional food, fine wine, and considered design, delivering a full guest experience rooted in quality and craft.

At the centre of the room sits a solid, natural-edged dining table, around which Sorrells installed 360-degree custom wine racking. The cellar is fully wrapped in joinery, creating a dramatic and immersive setting where every seat is surrounded by the collection.

Crafted in natural oak, the racking includes a blend of standard bottle storage, angled display, and shelving for large formats—offering both flexibility and clarity. The layout was carefully designed to complement the scale of the table and the rhythm of the room, with integrated lighting to softly illuminate the bottles without overwhelming the space.

This is a wine cellar designed not just to store wine, but to frame the dining experience itself—a space where the collection becomes part of the atmosphere, and every detail supports the theatre of great food and service.
